A new addition to NHI Food Safety Academy services - 'HACCP Certification' for the hotel, restaurant and catering sector in Oman.

  • A comprehensive Audit based Assessment and Certification process, based on Codex Aliementarius HACCP standards / Hazard Analysis Critical Control Point risk based management systems. Standards incorporate internationally recognised Good Hygiene Practice, industry Guidance, Food Regulation Middle East 2012, Oman Food Safety 84/2008 Law and, where relevant, Muscat Municipality Food Control Regulations.

  • 3 year Certification period with bi-annual / annual surveillance audits.

Assessment is based on one course assignment. Suitable for all supervisory level employees in all food handling businesses.

Course Content: Provides an understanding of the need for food businesses to adopt a food safety management system based on Codex principles. Suitable for food handling business owners, trainers, production managers and hygiene auditors or individuals wishing to gain a high level practical qualification in food safety to meet the requirements of current legislation by instigating a workable system of hazard analysis.

Practical Food safety Auditing Course

Course Content: Content:The course is designed specifically for proprietors, operations managers, risk managers, kitchen managers, food supervisors or food team leaders from the food service sector. No prior knowledge of food safety auditing is required although delegates should have achieved a Level 2 or Level 3 Food Hygiene Qualification or equivalent.
A one day course introducing the 6 point ‘Audit Cycle’, delegates will learn the practical skills and techniques required for auditing their own food establishments and how to report and action the outcomes. The course includes a refresher on the principles of HACCP based Food Safety Management Systems, legislative requirements and will give delegates the confidence to report on their own in-house or contracted facilities and will ultimately assist in improving food safety performance. The one day trainer led course does not culminate in an exam but a practical exercise held within the NHI kitchen facilities helps consolidate learning and provides a realistic and stimulating environment. A certificate of attendance is provided.

Food Safety Inspections and Audit

Course Content: Independent Food Safety Audits carried out by qualified and experienced nhi personnel. Providing food establishments with a practical 'hands-on' solution to food Safety & Hygiene issues; these audits are key to fostering the principles that build positive food safety & hygiene culture within an organization and improving inspection grades. Based on multi point audit Checklists that contain set criteria and standards drawn up against Muscat Municipality Food Control Regulations, international standards, industry guidelines as well as tailor made to follow specific brand standards and an organisations own HACCP/Food Safety Management System.
Comprehensive physical inspections of all food production and service facilities from receipt of goods, storage, production, cooking, cook-chill, hot-hold and service to your customers; including reviews of food safety management systems and training levels. Simple or more detailed written audit reports are provided explaining noted contraventions, the required corrective actions and recommendations. These include a percentage score for each area of operation so that individual establishments can track and compare progress.
