NVQ Level 3 in Professional Cookery

Duration: 12 months, day release, 1 day a week

Course Content: The course is aimed to assess and train chefs in complex or advanced food preparation and cooking skills. It is aimed at chefs who have had experience within the working kitchen environment. It includes a broad selection of areas such as food safety, managing resources, preparation of complex meat, vegetable and poultry dishes.

Chef Advanced Certificate Level 3 – Patisserie or Kitchen & Larder

Duration: 12 months, day release, 1 day a week

Course Content: Patisserie - Builds on the development of complex patisserie skills and establishes a knowledge base of design and display, portion control, costing and new technology. Suitable for Pastry Chefs who wish to upgrade their skills and gain internationally recognised professional qualifications.

Kitchen & Larder - Designed to provide practical and theoretical training on selection, preparation and cooking methods and on the presentation of a wide range of commodities to the level required by the more prestigious sectors of the industry. Suitable for employees in industry who wish to upgrade their skills and gain

Basic Chef Certificate

Duration: 4 months

Course Content: This course is aimed at providing basic food preparation skills to individuals. Suitable for individuals not looking for a full International Chef qualification.
